Lemon Garlic Butter Wings

Crispy grilled wings tossed in a bright lemon garlic butter.

Ingredients

  • 2 lbs chicken wings (flats and drumettes separated)
  • 1 tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 4 tbsp Red Feather butter
  • 4 cloves fresh garlic, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1/2 tsp red pepper flakes
  • 1 tbsp fresh parsley, finely chopped

Method

  1. Dry the wings. Pat every wing with paper towels until they feel tacky. Moisture is the enemy of the crunch.
  2. Mix the rub. Combine the baking powder, salt, pepper, and garlic powder in a small bowl.
  3. Coat the wings in the dry mix until every crevice is lightly dusted.
  4. Grill wings for 20 to 30 minutes on medium heat, rotating sides every 5 minutes.
  5. While the wings grill, melt the butter and add the garlic and lemon zest, plus optional red pepper flakes.
  6. Toss the hot wings in a bowl and pour the sauce over.
  7. Garnish with parsley and serve immediately.
