How it’s made

Three steps, and not much else.

The shortest route there is from grass to your pantry. Every step we leave out is the point.

    In the pasture

    New Zealand cows graze on grass the year round. It is the ordinary way to farm here rather than a premium tier, and it is why the cream arrives already rich and deeply golden.

    In the churn

    Cream and salt. That is the entire recipe. Traditionally cultured, then churned. No emulsifiers, no artificial preservatives, and no added color, because the color is already there.

    In the tin

    Sealed at peak freshness, at the place it was made, the moment it was made. The tin does the job a refrigerator would otherwise have to do, which is why it keeps for up to 24 months unopened.

That last step is the one people ask about. Butter this high in butterfat, traditionally cultured and sealed away from air and light, stays fresh on the shelf. Keep the tin somewhere cool and out of direct sunlight and it holds beautifully.
