Lemon Garlic Butter Wings
Crispy grilled wings tossed in a bright lemon garlic butter.
Ingredients
- 2 lbs chicken wings (flats and drumettes separated)
- 1 tbsp aluminum-free baking powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 4 tbsp Red Feather butter
- 4 cloves fresh garlic, finely minced
- 2 tbsp fresh lemon juice
- 1 tsp fresh lemon zest
- 1/2 tsp red pepper flakes
- 1 tbsp fresh parsley, finely chopped
Method
- Dry the wings. Pat every wing with paper towels until they feel tacky. Moisture is the enemy of the crunch.
- Mix the rub. Combine the baking powder, salt, pepper, and garlic powder in a small bowl.
- Coat the wings in the dry mix until every crevice is lightly dusted.
- Grill wings for 20 to 30 minutes on medium heat, rotating sides every 5 minutes.
- While the wings grill, melt the butter and add the garlic and lemon zest, plus optional red pepper flakes.
- Toss the hot wings in a bowl and pour the sauce over.
- Garnish with parsley and serve immediately.
