Brown Butter Lemon Pasta

A light, bright take on a classic, finished with fresh dill and a squeeze of lemon.

Ingredients

  • 1 lb pasta (bucatini, rigatoni, whatever you love)
  • 6 tbsp butter
  • 1/4 cup freshly grated Parmesan (plus more for topping)
  • 1 lemon (zest and juice)
  • 3 tbsp fresh dill, minced
  • Salt and pepper

Method

  1. Boil pasta in salted water until almost al dente. Save 2 cups of pasta water, then drain.
  2. In a large pan, melt 4 tbsp butter over medium heat. Let it turn golden and nutty, about 3 to 5 minutes.
  3. Add 1 cup pasta water and bring to a simmer. Add the remaining butter 1 tbsp at a time, stirring until creamy.
  4. Toss in pasta, Parmesan, lemon juice, and zest. Cook a few minutes until silky. Add more pasta water if needed.
  5. Remove from heat, stir in dill, and season with salt and pepper.
  6. Top with extra Parmesan and serve.
